I'm one proud father today, my son Simon took the bronze metal in the Skills Canada, Calgary region culinary arts competition. Now he's onto the provincials, to me it's amazing job since due to a paperwork mix up he didn't get the menu until last Friday where all his fellow competitors had the menu for 2 months. In May no matter what he'll do his dad proud in the provincials. :D

That is excellent. Reminds me a bit of that show on Food network called Chopped except the contestants only know the ingredients 1 second before the clock starts ticking.

On his way to a great career no doubt. Plus maybe he can give mom and dad a break in the cooking department once in a while. : )

WOW..Greg congrats! That is EXCELLENT!
Being a Pro Chef myself I know that is a HUGE accomplishment and a difficult task (the pressure at these things is intense) for any Chef, let alone a very young one.

These are his plates, he had a problem with his Sorbet machine so he had to re-invent his desert on the fly. According to one judge his chicken was to die for. He's going to be working hard on his plating to improve that and now he has some good ideas. Oh and he's the tall guy in the middle.

Very nicely turned carrots...perfection!
If he want's some ideas on plating...let me know. :)
I might have a few pointers here but only if he wants them.

I can't think of a better skill to have in any career than the ability to think on your feet when things go wrong. Sounds like he's got that down pat. Congratulations to him, and here's hoping he takes the top prize!
