Depends on what discipline of photography you're interested in. Weddings are most common on weekends, and especially for the bigger events, a second shooter is often used. My experience with portraiture is limited, but typically that's been evenings/weekends, while commercial stuff, advertising, etc is generally a Monday-Friday, nine to five event.
If you're going to second-shoot at a wedding or portrait session, you'll typically need your own gear; a minimum of one body, basic lens from med wide to med telephoto, at least one flash, and an understanding of exposure, posing and lighting.
Have you looked into a local camera club? They're often excellent sources of information on things like this, as well as being great places to learn from more experienced photographers.
